EDWARDSVILLE, IL – The family-owned Doc’s Smokehouse has only been open a couple of years, but is a lunchtime magnet in Edwardsville.
Owner Doc Richardson, or ‘Dad’, has barbecue in his DNA. His father smoked meat in Tennessee for many years.
Co-owner and wife Susan Richardson was a corporate coach. She brought those talents to a family restaurant that runs with military precision.
They have to get all that award-winning barbecue to a customer base that is made up mostly of nearby employees. That means the line is out the door during lunchtime and after work. They get all that slow-cooked goodness to the customers in enough time to get them back to work and on the way home.
By the way, the food is amazing. One dish is called Burnt Ends. The meat is smoked and charred for hours until is falls apart. This is a delicious study in effective supply-chain management.
